Ceremony grade
The term ceremonial matcha is an invention of (perhaps overly clever) marketers - there is no system, control, nor standard. Any importer can therefore declare anything they want as ceremonial. Ceremonial matcha has thus become a litmus test that indicates how much you can trust a given seller.
In Japan, a good reputation is everything, and we adhere to Japanese standards. That is why we use the term ceremonial matcha only for matcha varieties that are of sufficient quality for preparing koicha - a thick tea used in the Japanese tea ceremony chadō.
