Mr. Saito transitioned to organic farming 40 years ago. Like anyone venturing down untrodden paths, he faced a difficult start. However, today, his teas rank among the finest in the entire Hon’yama region.

His tea farm is located in the renowned Hon’yama area of Shizuoka Prefecture. The mountainous conditions, frequent fog, and sharp contrasts between day and night temperatures nurture high-quality tea leaves. The resulting tea, known as yama no cha, or "tea of the mountains," is distinguished by its refreshing aroma, delicate flavor, and pleasant mineral balance.

Saito Tea Garden has held JAS organic certification since 2001. Mr. Saito prioritizes environmental preservation: no pesticides or chemical fertilizers are used, opting instead for a natural ecosystem that emphasizes food chains and protection of the surrounding landscape. The result is a nutrient-rich tea grown in harmony with nature.

His teas undergo a short asamushi steaming process (浅蒸し), allowing the leaves to retain their natural structure and nutrients. This process results in a beautiful golden-green infusion with a vibrant aroma and intense flavor.
