The best teas are produced in spring from the very first leaves – Hashiri Shincha (走り新茶). This is a premium hand-picked sencha from the Yabukita cultivar, which the Kinezuka family produces every year in limited quantities.
The tea bushes have been resting since last autumn. Over the long, cold winter they have stored nutrients in their roots, and now they drive this energy into the leaves. The content of L-theanine and other amino acids is at its peak, giving a deep, sweet flavor with pronounced umami.
