This is the finest grade of carefully selected shincha from the mountainous Honyama region. A blend of the best leaves from Mr. Katsuya Saito’s natural tea farm, this tea represents the most exceptional creation of this master farmer for the current year.
Ohashiri is connected to a Japanese legend which says that drinking this tea within 88 days of the beginning of spring will grant you strong health for the entire year.
Mr. Saito’s farm is located high in the mountains of Honyama – a region renowned for its misty valleys, pure mountain water, and dramatic differences between day and night temperatures. These natural conditions produce a highly aromatic “mountain tea” (yama no cha) with a delicate taste, refreshing fragrance, and pleasant minerality.
Mr. Katsuya Saito transitioned to organic farming more than forty years ago. Without pesticides or chemicals, and with complete faith in the balance of natural ecosystems, he built a tea farm that has been certified JAS Organic since 2001. His approach not only protects the surrounding environment but also yields exceptional tea.
The leaves are lightly steamed (asamushi), preserving their natural shape and nutrients. The resulting infusion is a clear green-golden color, offering a deep yet refined flavor that lingers with notes of mountain clarity and fresh greenery. Thanks to its high theine content, it is one of the most stimulating teas in the Rishe Tea collection.
