A single-cultivar sencha of the Yabukita variety grown at high altitude in the hills above the town of Fujieda. The elevated position of the plantation results in cooler temperatures, frequent mist, and slower growth. This concentrates amino acids in the leaf, creating deep umami and a gentle sweetness typically found in shaded teas such as gyokuro or kabuse – here, however, it is purely the result of terroir.
The flavour is full and rounded, with a delicious depth that slowly unfolds on the palate. Delicate vegetal notes transition into a lingering sweetness, without the astringency that often appears in classic senchas. A sophisticated tea with soul.
We recommend tasting it alongside other Yabukita cultivar senchas – it beautifully illustrates how altitude shapes flavour.
