Sencha Kurumi is a Japanese green tea – more precisely, a high roasted sencha from the mountainous regions of Shizuoka. It captivates with its intense aroma and smooth, umami-rich taste without a hint of bitterness.
This is an asamushi sencha, meaning it’s only lightly steamed. This method is used for higher-grade teas, as it gently preserves the structure of the leaves while enhancing their natural flavor. In Kurumi’s case, it is further complemented by intense roasting, which gives it a warm, nutty aroma reminiscent of roasted chestnuts.
The recipe was crafted by Natsumi Osada, a celebrated tea master and champion of numerous tea competitions in Japan. The result is a tea with gentle, refreshing astringency in perfect balance with its full-bodied flavor.
Don’t hesitate to use 80 °C water for the first infusion — this tea will reward you with a deliciously fragrant cup.
